Organic Falafel Crust Mediterranean Pizza (So good, So Healthy) Toppings (Mushrooms, peppers, olives, tomato, cucumbers, parsley, artichoke hearts, olive oil, red onions, Coconut yogurt Tzatziki Sauce) RECIPE: FALAFEL PIZZA: 1 can of chickpeas (drain & rinse)4 cloves of garlic (minced)2 Tablespoons tahini2 Tablespoons fresh lemon juice1/2 teaspoon ground cumin1/4 teaspoon salt1/4 teaspoon pepper4 Tablespoon gluten-free flour1/2 Cup fresh parsley (chopped)Top with hummus, roasted eggplant, caramelized onions, avocado, tabouleh, olives Directions:Preheat oven to 450 degrees Place chickpeas in food processor and pulse until finely choppedTransfer chickpeas to a large bowl and stir in the remaining ingredients until well combinedSeparate chickpea dough in half and use your hands to press each half into a ballOn a lined baking sheet form dough balls into 2 pizza crusts and lightly drizzle olive oil on top Bake in oven for 40-50 minutes or until brown Remove from oven and add desired toppings Classic Tzatziki ---------------- A traditional Greek dip and gyro condiment, this tzatziki recipe makes a tasty topping for any lamb or beef. 1 cup grated seeded peeled cucumber 1/8 teaspoon salt 1 cup pure canned coconut milk 1 tablespoon chopped fresh mint 2 teaspoons chopped fresh dill 2 teaspoons fresh lemon juice 1/4 teaspoon salt 2 garlic cloves, minced Place cucumber on several layers of paper towels; sprinkle with 1/8 teaspoon salt.
