Orzo Pasta Salad Must prepare ahead Serves 8-10 people Ingredients: 1 cup of orzo (rice shaped pasta) 1 cup of feta cheese, crumbled 1/3 cup of salad oil (scant) 3 tablespoons of parsley, chopped 3 tablespoons of dill, chopped or 1 tablespoon dried dill 1 large tomato, seeded and chopped ¼ cup of lemon juice ½ teaspoon of salt ¼ teaspoon of pepper ¼ teaspoon of red pepper (optional...if you like the heat!) ½ can of black olives, chopped 2 green onions, chopped Bottled Greek salad dressing to taste Cook orzo according to package directions. Drain and rinse with cold water. In a large bowl, combine all ingredients, except for Greek dressing. Add dressing as desired until the mixture is moist but not soupy. Add 1/3 C. dressing and continue to drizzle in more as needed. Cover and refrigerate. Although it looks moist now, the orzo will absorb the oil and it will become drier as is sits in the refrigerator. Be sure to make several hours or the day before serving. If it seems like it needs a little more dressing after the “sitting” time, you can always add a little more. Stir again before serving. Enjoy this recipe for the Orzo Pasta Salad, shown below!
