Our Monday meal recipe is Lentil and Spinach Dhal (Orange Route) Serves 4 2 onions (chopped) 2 teaspoons easy garlic (from jar) ½“ piece fresh ginger (grated) 10oz butternut squash (bite size pieces) 2 red peppers (chopped) 6oz lentils 2oz spinach One cal fry light spray Handful of fresh coriander (chopped) 1 teaspoon cumin seeds 1 tablespoon black mustard seeds 2 tablespoons mild curry powder Seasoning to taste Fry the onions in the one cal fry spray for 1–2 minutes. Add garlic, ginger, cumin, mustard seeds and curry powder and cook for further 1–2 minutes. Add lentils and 1 pint water, bring to the boil. Add the butternut squash, peppers and spinach, cover and reduce the heat to simmer for approximately 15–20 minutes, stirring occasionally until lentils are cooked and tender. Season to taste, and stir in the coriander. Serve with boiled rice. Unlimited on Orange Route
