Our Salsa Wars Vendor Division went to Michael Wilson this past weekend and we promised you the recipe. Thanks for sharing Michael! Hot and Spicy Salsa Recipe Michael Wilson Makes between 1 - 2 cups of salsa (depends on how big the tomatoes are) 3 Heirloom tomatoes (which ever ones you think taste best) 1 Small yellow onion 1 Habanero pepper 1/3 cup of Cilantro leafs 1-2 Garlic cloves (depending on the size of the cloves) 1 Tbsp of Red wine vinegar 1 Tbsp of Homemade seasoning 1 Tbsp of Cumin 1/2 tsp of Cayenne pepper First boil tomatoes for 10 min., then peal the skin off the tomatoes. Cut them up and put them into a food processor and blend until most of the tomato has been completely blended, put tomatoes into medium sized pot on medium heat. Next chop onion and put into food processer and blend until finely minced, add to mix. Next chop the habanero pepper and place into the food processer and blend until finely minced, add to mix. Next, with knife, finely mince cilantro leafs, and add to mix. Next press the garlic clove(s) into the mix and stir thoroughly. Next add the homemade seasoning, cumin, and cayenne pepper; stir thoroughly. Place lid on pot and let sit on medium heat for 10 - 15 minutes. Next put the mix into the food processer and blend for 1 - 2 minutes, pour back into pot. Let simmer on low heat for about 20 minutes. Let stand until it has cooled enough to put into a jar. Finally place into refrigerator to cool and sit overnight to let the flavors mix. Eat with chips or any food you want spiced up a bit. Enjoy.
