Our culinary team had a really great kitchen meeting today as we lay the groundwork for what we want to achieve as we come upon our one year anniversary of opening Masons. Our team has learned a lot over the past year and know our strengths, weaknesses, obstacles that we have to work together to overcome so we can raise the bar for our guests. Im proud of our team of this first year and were ready to take it up a notch. Super excited for a menu change coming up, getting more immersion circulators to focus on cooking all proteins precisely, and working on labor hurdles so we can focus on more areas that we can raise the bar in. Running a restaurant in a hotel is certainly not easy with a 24 HR operation but what makes it easier is having a team that you know you can count on.
