Our first installment of RUNGRY (Run+Hungry) features a Vegetarian Pesto Pizza (check out the photo album for pix and recipe). Pizza is a Friday-night-pre-long favorite of Garth Bilodeau and Scott Mills Johnston. There is no right or wrong way to make a pizza - can be made with wheat, white, or gluten-free crust and topping options are only limited by your imagination. Although, if you choose to eat this as your pre-long run fuel, consider staying away from ingredients that are spicy or hard to digest (like extra cheese!). This recipe contains good fats (olive oil), good carbs (wheat crust), and antioxidants with the basil and tomatoes. Each week we will feature a recipe or tips and tricks to keep you healthy, fueled, hydrated, and ready to run. Honestly, I love to cook and bake, but when I’m logging lots of miles, it has to be easy to prepare food with maximum nutritional value. You’ll see recipes from all categories – from super foods to sweets treats and breakfast to midnight snacks.
