Our food regulation enforcement is getting out of control. Yes, there is a valid reason for food safety, but if we cant get GMO foods labeled, why bother with this? There are many historical food production methods that dont cause any harm that dont meet modern HACCP. The right woods have been shown to prevent food contamination (look up wooden cutting board safety vs composite boards) and cause no harm. They are actually beneficial in supporting the correct bacteria to cure certain foods. If this interpretation of the rule is allowed to be enforced, we will no longer be allowed to make or import artisan cheeses cured on wood. Whats next? Beer? Whiskey? Wine?
