Oven Baked Chicken Fajitas Serves 5 Ingredients 1 pound boneless, skinless chicken breasts, cut into strips 2 Tbsp coconut oil 2 tsp chili powder 2 tsp cumin ½ tsp cayenne pepper ½ tsp garlic powder ¼ tsp salt 1 (15 oz) can diced tomatoes with green chilies 2 medium onions, sliced 2 large bell peppers, seeded and sliced Instructions *Preheat the oven to 400 degrees. *In a Ziploc bag combine the oil, chili powder, cumin, garlic powder, and salt and chicken and give it a shake. Place the chicken at the bottom of the 13x9 pan. Next add the tomatoes, peppers, and onions to the dish and stir to combine. Bake uncovered for 30-45 minutes or until chicken is cooked through and the vegetables are tender. **Sometimes, I add organic black beans or roasted corn on the top before baking. It is not necessarily Paleo, but it’s a treat sometimes**
