Overnight Baked French Toast!! I halved the recipe for just me & Matt; this recipe makes 6 servings. Ingredients: 12 pieces light bread (40 calories per slice) 2 large eggs 2 cups egg whites, lightly beaten 2 cups unsweetened almond milk 1 TB vanilla extract 2 TB coconut oil, melted 2 TB cinnamon 2 scoops vanilla protein powder 2 tsp. Pink Salt Directions: 1. Cut up bread into 1-inch pieces and arrange in a 9×13 baking dish, coated with non-stick cooking spray. Set aside. 2. Combine eggs, whites, almond milk, vanilla and coconut oil. Blend until light and fluffy. 3. Add in cinnamon, protein powder and salt and continue to mix until ingredients are well blended. 4. Pour over the top of the bread pieces into the baking pan. 5. Cover with plastic wrap and put in the refrigerator overnight or at least 8 hours. 6. Preheat oven to 350 degrees. 7. Remove the plastic wrap from the baking pan and bake for 45 minutes, or until puffy and golden brown on top. 8. Remove from oven and cut into 6 even pieces. Drizzle desired syrup, toppings, etc!
