Overnight Oatmeal – Makes 6 servings 1 cup old-fashioned rolled oats (not instant) 3 cups plain yoghurt or kefir 3 tbsp honey or maple syrup 2 large apples, grated 1 cup mixed fresh fruit such as berries, sliced kiwi, save a little for garnish Combine the oats, yoghurt, honey, apples and mixed fruit in a bowl, making sure that the apple is completely folded into the yoghurt. Divide the porridge evenly among six 8-ounce glasses or mason jars, cover tightly with wrap or lids and refrigerate overnight. The next morning garnish the porridge with more fresh fruit and enjoy! Optional Add 1 tbsp flax or chia seeds Toss in a handful of nuts Add a pinch of cardamom or cinnamon or dash of vanilla
