PDX Fermies! Im gauging interest for a PDX Tongbaechu Kimchi Party. This is the fancy kimchi made with a porridge, where the quartered cabbages are stuffed with the veggies and spices. Well be using Maangchis recipe, which includes fish sauce and salted shrimp. The idea is I will source all the ingredients, everyone brings their own jars, we make it together, and participants reimburse me for my costs. I will purchase Mother-in-Laws Kimchi [MILKimchi] gochugaru and mostly (but not all) organic ingredients. Ive spoken to the produce manager at New Seasons Market and we could get a 40# case of organic napa cabbage for a good price (about $1/lb), which would make about 25 quarts of kimchi. If the group is small then costs will be a little higher. Event will be held on the early afternoon of Sunday, February 8th at my home in Beaverton (unless someone more centrally located would like to host).
