PEANUT BUTTER SNOWBALLS....a four-ingredient after-school snack! To make these, I ditched the confectioners sugar approach, and instead used non-fat dry milk. So they are still sweet, but filled with protein as well! The addition of ground pecans give them an awesome texture (feel free to use any nut or seed;).... Peanut Butter Snowballs This is my kind of Christmas treat to make with my kids...four ingredients, mysteriously healthy, keeps in the fridge, and delish. We think they taste like candy! Serve them with the snow sprinkled around them. Inevitably we end up in a powdered snow fight, too:) 1 cup creamy peanut butter 1/2 cup pure maple syrup 1 1/2 cup nonfat dry milk, plus more 2/3 cup ground pecans 1. In a bowl, stir together peanut butter and maple syrup. Stir in nonfat dry milk, and ground pecans. Mixture will be thick! 2. Roll by tablespoonfuls into balls. Pour some extra nonfat dry milk into a bowl. Roll each peanut butter ball into the dry milk several times, to coat it like snow. Makes about: 24 - 28 (depending on how small or big you make the the balls)
