PEAS ,BASIL,LETTUCE,PARMESAN. The pea crop was a flop this year , planted too late . I pulled them all out today , picked some cos leaves + basil leaves . Ive always loved the classic French dish that involves braising lettuce + peas . This is not it, but it inspired me . Pod the peas , being some water to the boil in a pan , add some salt + sugar + a good chunk of butter . Drop in the peas and cook till the water has evaporated . Remove from the heat . Throw in the fresh cos + basil leaves to wilt , add olive oil and lemon juice and fresh cracked pepper , toss , grate fresh parmesan across the dish . Serve as a side dish or on top of some meatballs + spaghetti .
