PERUVIAN CUISINE INSIGHT Anticuchos These skewers of grilled, marinated meat (much like shish kebabs) are served everywhere in Peru. High-end restaurants offer them as entradas, or appetizers. Street-cart vendors sell them slathered in a garlicky sauce.
