PORTUGUESE KALE SOUP RECIPIE Calvin Andre Hardy 1lb Kale (I use more than that because I love kale) Wash, and remove stems and tare into medium pieces. 1lb Potatoes Peeled and diced ( I use more because the potatoes are what thickens the broth) Depends on what you like/thickness, and also sometimes I use cornstarch to thicken it some, but ma doesnt like the cornstarch though I snuck some in tonight :) 1/2 cup carrots (optional) diced 1 cup onions diced (once again I use more because I like onions) 2 tsps. Garlic Minced ( I use a tad more once again lol) 1lb Kiebasa, blanched and diced into bite size pieces (cut the kiebasa into four pieces, in half at first, then down the middle on the two halves. Then fork each piece. Then put water in skillet just to cover the bottom of you skillet....put kiebasa in skillet and half cook turning it over. It takes the grease out of the kiebasa. 2 tb olive oil 1 tb butter 6 cups of chicken or beef broth (6 cubs, I use 3 of each) 1 can diced tomatoes (plain diced tomatoes) 1 can kidney beans (red or light, honestly doesnt matter) DIRECTIONS...... 1. Blanch the kiebasa, drain and cut the sausage into bite size pieces. 2. In a large dutch over, sauté carrots if used, onions, garlic in the oil and butter until softened. I do it for about 15 mins. 3.Start the broth, which I kinda do while Im doing every thing else. (Im a good multi-tasker) :) 4. Add the peeled and diced potatoes and broth to the onions and garlic mixture in the dutch oven. Simmer until the potatoes are soft. 5.Mash the potatoes. (either against the side of pot, but I use a potato masher lol, it is a lot quicker) That once again thickens the broth 6. Add the tomatoes and the kidney beans....simmer for about 15 mins 7. Add the bite sized blanched kiebasa and simmer about 20 or so more mins. 8. Add the Kale, cover and simmer for another 10/15 mins. **** I add salt while its cooking for seasoning. I like salt and I do think it helps the taste out. I would also suggest, until you get this recipe down, do your prep before you really get going on it. Cut up your potatoes, onions, carrots if you use them. Get your broth going, then get your kiebasa going. I have made this so many times I have a routine down lol. GOOD LUCK, ENJOY MY FRIEND
