Arroz con gandules, pernil, guineos en escabeche y una ensalda con aguacate luego un flan o pastellios de guayaba......o diferentes entremeses com papa rellena ,alcapurrias,bacalaitos.pinchos de carne de puerco, pollo y carne de res con ceboll as y pimiento morron o verde.y pan con ambos.suerte. Arroz con gandules pernil or ham and potatoes salad fried plantains shaped into a cup and stuffed with shrimps that are marinated in lemon juice, chopped tomatoes, cilantro, scallions and hot sauce to taste. i cut the plantain straight not diagonally, then I fry them the first time and I mold the plantains into a small cup that has a flat bottom (i use my measuring cups). Remove plantain from cup and finish frying them. I Stuff with the marinated shrimp and the mixture. I use large shrimps and 3 fits in a cup with mixture. This is always an incredible hit with my guests. arroz con gandules and beef empanadas. They like everything else but the empanadas are ALWAYS a hit. You can make empanadas as appetizers by cutting the dough in half and making little empanadas. That way everyone gets to taste it. So far, I havent had a negative comment on any of our cultural dishes. Arroz con gandules pernil potato salad and some coquito on the side Sorrullitos con mayo ketchup... empanadillas de carne con queso... pinchos con pan... arroz con gandules... guineitos en escabeche arroz con gandules is a must and also pernil. I guess that all you would need . buffet style with a variety of small portions but just enough so that people can have 2nds. Since it is AZ, learn your PR version of one or 2 small recipes that are local and then add your twist. Be prepared for negative comments though but that is what makes you friends! carne mechada arroz blanco and habichuelss. Pinchos and potato salad arroz con tocino y habichuelas con patitas. Alcapurrias y pastelon de amarillos con carne molida. Bacalaitos
