PUPUSAS, A KIND OF STUFFED TORTILLA Pupusa: the word come from the Pipil-Nahuatl word pupushahua, which means, unsurprisingly, filled tortilla. They are filled with one or more of - - cheese; chicharrón=fried pork rind; refried beans; prawns; squash/courgette; spinach; edible loroco flower buds. Eaten with a coleslaw-like mixture called Curtido, recipe posted! This is what you need equal quantities masa flour (tortilla flour) water - 4 cups of each makes 12. Water or oil to stop it sticking to your hands And this is what you do Mix the water into the meal, 1 cup at a time, kneading by hand for about 10 minutes until the dough is described as moist and fluffy?? I haven’t tried this so I don’t know what that means! If needed, add more water 1 tablespoon at a time. The dough can be prepared the day before, if covered and refrigerated. Divide the dough into 12 equal small balls. Divide the filling equally for the 12 pupusas. Take the dough ball in the palm of your hand, push in the center of the ball to make a well. Fill each pupusa. Close the top by pushing and pinching together. Wet or oilyour hands, and press and pat each ball between your palms. Flatten it into a thin round that is about 4” in diameter and ¼” thick. Or if you prefer metric pupusas that’s 10cms/ ½cm. Make sure the edges are nice and thin, but be careful not to press too hard so that the filling does not spill out of the sides. It takes practice, don’t worry if they aren’t round when you finish! Oil a griddle or heavy frying pan, and fry both sides.The pupusas are ready when they puff up and turn slightly golden. FILLINGS Cheese filling: 3 to 4 parts grated cheese and 1 part sour cream or crème fraiche, pinch salt Cheese and loroco filling Add loroco buds to the cheese and cream filling above - if you can find them in a Hispanic store. Loroco buds taste sharp, sour and a little bitter. We could use capers or nasturtium seeds or buds as a substitute. Squash filling – courgette really - The key is making sure it’s completely drained of all liquid, otherwise the filling will be watery. Summer squash or courgette and minced onion, both grated and patted dry in a towel maybe chopped tomatoes, but they are wet. Fry the veg in oil for just a minute. Season. Add grated cheese.
