Packed lunch ideas inspired by Burns Night | The lunch box: Add a little Scottish flavour to your midday meal with haggis Scotch eggs, salmon pasta, cock-a-leekie soup or neeps and tattie salad It can feel like there’s little to celebrate in the dark days of January. Christmas is long gone, and no matter how careful you’ve been, it’s likely your purse strings are tighter (the sting in the tail of that early December payday). So as the month draws to a close, we’re grateful to have that most convivial and literary of celebrations, the Scottish institution that is Burns Night, to look forward to for lunch inspiration. • While it’s not the most immediately obvious of lunchbox ingredients, haggis makes a brilliant scotch egg (or sausage roll) filling, and is so flavoursome that it doesn’t need any additional seasoning. Thanks to Innis & Gunn for sharing their scotch egg recipe with us, which we’ve adapted here: cook 4 eggs for 7½ minutes in boiling water. Leave to cool, then peel. Mix the haggis with sausage meat using your hands, and wrap around each egg. Roll in whisked egg, then breadcrumbs. Shallow fry until golden brown on each side, then finish off in an oven preheated to 180C/350F/gas mark 4 for 10 minutes (place on a wire rack so any fat drains off).
