Pakhal time is here again ! I have introduced a few non-Odiya friends to this exquisite Odiya essential ! They loved it ! It was hilarious watching a Punjabi friend from Delhi spooning up pakhal with a spoon! I advised her to use her hands ! Badhi chura and Koshala saaga were very much appreciated ! Have ordered some succulent Chingudi sukhua and Khainga sukhua for the summer pakhal treat ! Happy Pakhal times ! I strongly believe that Pakhal should be eaten only from a Kansha (Gun metal) bowl. I now use a set at home. Also keep some ambakashia adrak at home ...Gives a lovely flavour to the Pakhal ! The only thing I cant get is the Deshi Cow curd ! Thick and fleshy with a heavenly flavour which boosts Pakhals taste. Even in the villages, Deshi cows have become rare !
