Palabok Fiesta. Ingredients: -1 pack rice noodles... Sauce: -2 tbsp cooking oil -1/2 pounds ground pork -3 cups pork broth -1 shrimp cube -1 tbsp annatto powder -6 tbsp all purpose flour -2 tbsp fish sauce -black pepper to taste Toppings: -1/2 cup boiled pork, sliced thinly -1 cup boiled shrimp -1 egg, hard boiled and sliced -1 cup pounded chicharon -1/4 cup scallions, finely chopped Preparation: 1. Prepare the noodles. Soak the glass noodles in water for about 15 minutes while you are boiling water in a pot. Once the water has boiled, drain the glass noodles and place it in a metal strained that you can submerge in the boiling water. Let the strainer stay in the boiling water for about 1 minute. Make sure that the noodles are still firm and avoid over cooking the noodles. After doing so, drain the water and set the noodles on the serving plate. 2. Prepare the sauce. Heat the oil in a pan then cook the ground pork. Dilute the annatto powder in the pork broth then pour it in the pan. Add the shrimp cube and dilute it in the mixture. Simmer for 3 minutes then gradually add the flour while stirring continuously. Add the fish sauce and pepper and continuously stir the mixture until you’ve achieved the desired thickness of the sauce. 3. Prepare the Pancit Palabok. Pour the sauce on the glass noodles that you have set aside on the serving plate. Arrange the garnishes on top of the sauce then serve with slices of lemon or calamansi on the side.
