Paleo Pantry Grain-free Bread Recipe Option Part 1 (Part 2 tomorrow) https://facebook/Paleopeoplenz GRAIN-FREE TOASTED BUTTER SHAPES I have set myself a task to think of some fun real food lunchbox ideas for Max and Chloe, that avoid sandwiches. We dont eat grains because they lead the body into a state of inflammation and fat accumulation (see website link below for further reading on this) but sometimes I do buy a grain-free loaf to help me with some quick-fix options. This loaf from Paleo Pantry works well and freezes good too. Last night I had an idea (which is in two parts, youll see part 2 tomorrow) to make some easy, toasted butter shapes to go into Max and Chloes lunchboxes, along with a platter arrangement of fruit, veg, protein and fat. 1. Using cookie cutters, cut out shapes in slices of the bread. 2. Store the bits from the outside of the slices, including the crusts into a sealed container and place in the fridge to keep fresh (I will show you tomorrow what I do with these. I always try to never throw anything out). 3. Butter both sides of the shapes. I tried a few shapes with a dairy-free Coconut Butter by Natural Abundance and then buttered the remaining shapes with Ghee (clarified milk butter) by Gopala. Both options tasted yum! 4. Place into a flat plate sandwich press (I used Breville). This compresses them. You could also try baking in the oven but I havent tried this way yet. 5. Wait until they are golden brown. Doesnt take long, just a couple of minutes. 6. Pull out and let them cool down, store in the fridge / lunchboxes. Paleo Pantry Grain-free bread does contain nuts and Chloe goes to a nut-free, seed-free kindy. A temporary solution to this restriction, is that I allow Chloe to have rice as part of her lunchbox platter for kindy (we will move her off rice in the future as we dont eat grains). Therefore, for Chloes lunchbox, I did the same thing but used a preservative-free rice flour loaf from our local bakery and used Ghee to crisp the crackers too. Hers are star shaped (which Im sure shell love!). She also has a nut free herb spread too by Waiheke Herb Spread (Max has Genoese Pesto from Countdown which contains nut in his) both have good sources of oils in them for dipping the shapes into or spreading over the top.
