Pan Seared Mahi-Mahi with Mango Salsa Ingredients Fish: 4 mahi-mahi fillets (about 750 grams) Juice of ½ lemon Salt and freshly ground black pepper 2 tablespoons oil Mango Salsa: 1 mango 1 onion, chopped 1 red and 1 green jalapeno, seeded and chopped 1 tablespoon chopped fresh cilantro leaves or Basil leaves 1 clove garlic, minced 1 teaspoon rice wine vinegar or dry vermouth Salt and freshly ground black pepper Method For the salsa: Peel the mango, seed and dice the mango. In a bowl, stir in the onion, cilantro/basil, garlic, and vinegar/vermouth. Season with salt and pepper. Set aside. Rub the fish fillets with the salt and lemon juice and let it sit for 30 mins. Heat a large sauté pan over medium-high heat and then add the oil. Place the fish in the hot pan (skin side down) and sear until golden on 1 side, 3 to 4 minutes. Turn the fish over and cook until cooked through, another 3 to 4 minutes. Be careful not to overcook the fish. Place a mound of rice on each plate. Top with mahi-mahi. Spoon the mango salsa over each fillet. Note: I used dry vermouth and basil.
