PanchMel Daal and Baati- here comes the recipe of a very well known Rajasthani dish...... people know Rajasthani food by the name and fame of this very dish......its DAAL BAATI...... a very popular cuisine in Rajasthan, which is served with GATTE KA SAAG and sweet dish CHOORMA.....these four dishes make a combination cuisine, which is very popular in Rajasthan and among the Rajasthanis all over the world........ be it some puja, festival or function, this cuisine fits with anything :) Ingredients: Split green gram skinless (dhuli moong dal) 1/4 cup Split black gram skinless (dhuli urad dal) 1 cup Split Bengal gram (chana dal) 1/4 cup Red chilli powder 1 teaspoon Ginger,chopped 2 inch piece Turmeric powder 1/2 teaspoon Cumin seeds 1 teaspoon Asafoetida a pinch Whole dry red chillies broken stemmed 2 Cloves 3 Green cardamoms 2 Cinnamon 1 inch stick Bay leaves 2 Curry leaves 5-6 Tomatoes 2 medium Green chillies chopped 3 Salt to taste Oil 4 tablespoons Fresh coriander leaves chopped 1/4 cup Lemon 1 medium Whole wheat flour (atta) 2 cups Carom seeds (ajwain) 1 teaspoon Baking powder 1/4 teaspoon Pure ghee 1 cup + for soaking and serving Method FOR PANCHMEL/PANCHRATAN DAAL- 1. Soak moong dal, urad dal and chana dal in about three cups of water for an hour. 2. Boil the dals with turmeric and salt till done (you can cook the daals in pressure cooker too) and mash them properly with the back of a round ladle. 3. Heat oil in a pan. Add cumin seeds, asafoetida, dry red chillies, bay leaves, cloves, cinnamon, cardamoms, curry leaves, ginger, green chillies, tomatoes and red chilli powder. 4. Sauté till the oil surfaces. 5. Add the cooked dals to this and blend properly. 6. Garmish with juice of lemon and chopped coriander leaves. FOR BAATI- 1. Take WHEAT FLOUR in a bowl. Add salt, baking powder and half a cup of pure ghee. 2. Mix well. Add sufficient water and knead into a stiff dough. 3. Preheat oven to 180°C. 4.Take lemon sized portions. Press firmly and roll into round balls. 5. Grease a baking tray. Place the baatis on it. Press them slightly. 6. Place the tray in the preheated oven and bake at 180°C till done. It may take fifteen minutes to half an hour. 7. Soak hot baatis in ghee for some time so that it absorbs the ghee. We Rajasthanis are just fond of ghee, doodh, dahi,chaas and makhan. I understand Rajasthani food to be the richest food (rich in calories ;) ) and its not easy to digest Rajasthani food as well ;) ...... TIPS: 1. If you add a little aamchur powder to the daal, it will taste even better. 2. Its ok to cook baatis in the oven, but if you cook it on gas oven or barbeque oven using coal, the smoke would give it a smoky taste which will enhance its overall taste. :)
