Paper Bag Apple Pie...from a 1964 recipe Book 1 unbaked 9 inch pastry shell 3-4 large baking apples 1/2 cup sugar (for filling) 2 Tablespoon flour (for filling) 1/2 teaspoon nutmeg 2 Tablespoon lemon juice 1/2 cup sugar(for topping) 1/2 cup flour (for topping) 1/2 cup butter or margarine Make an unbaked 9 inch pastry shell. Pare,core,and quarter apples, than half each quarter cross-wise to make chunks(7 cups). Place in large bowl. Make filling by combining 1/2 cup sugar, 2 tablespoons flour and nutmeg. Sprinkle over apples toss to coat well.Spoon into shell. Drizzle with lemon. Combine with 1/2 cup sugar,1/2 cup flour, for topping, cut in butter. Sprinkle over apples to cover top.Slide pie into a heavy brown paper bag to cover pie loosely, fold open end over twice and fasten with paper clips. Place on large cookie sheet. Bake in hot oven 425 degree for 1 hour. Split open. Remove pie.
