#PaushtikThalipeeth from #Kalnirnay As we are slowly heading to the close of 2014 and beginning of a brand new year, markets are flooded with calendars of all kinds. But, my favourite has always been our very own ‘Kalnirnay’. Never can I forget the old Kalnirnay advertisement on Doordarshan. It went in three languages something like this – Marathi: कालनिर्णय द्या ना…. कालनिर्णय घ्या ना Gujarati: कालनिर्णय आपो ने… कालनिर्णय लो ने Hindi: कालनिर्णय दिजीए… कालनिर्णय लिजीए (Customer: Can you give me a Kalnirnay?…. Shopkeeper: Here is the Kalnirnay) Then, there was this signature jingle: भविष्य मेनु आरोग्य ज्ञान, उपयुक्त साहित्य प्रत्येक पान । पंचांग शोभे सुमंगल असावे. भिंतीवरी कालनिर्णय असावे ॥ Astrology, Recipes, Health, Information,… Useful literature on every page May you get an auspicious horoscope, let there be a Kalnirnay on your wall. (I know the English translation sounds funny… :-) But once upon a time, this used to be a very popular ad. Wish I could sing it and post here the audio as well) No Maharashtrian home is ever complete without two things… a Ganesh murti (statue) and a Kalnirnay Calendar. I realised how powerful the brand ‘Kalnirnay’ is when the other day I had been to the Ideal Book Depot at Dadar. I found everyone including myself asking “ek Kalnirnay dya” (give me a Kalnirnay) instead of saying “ ek calendar dya” (give me a calendar). It’s almost like Maggie of noodles, Kelloggs of cornflakes or Google of search engines..! Hats off to Jyotirbhaskar Jayant Salgaokar who first introduced this groundbreaking genius concept. Before that no one had thought to use the back side of a calendar ever before! Apart from railway schedules, recipes, health and beauty tips, panchang and so on, there are also articles by distinguished literateurs which makes it a wealth of information in itself. Also marked in it are hundreds of little occasions and festivals that are celebrated in every nook and corner of India. While other calendars look good, there’s something in Kalnirnay that makes me feel good too… especially the ‘red’ dates appearing on weekdays ! :-) There was a time, a few years ago, when the first time I held the new year’s Kalnirnay I would look up for my monthly ‘bhavishya’ (prediction as per the zodiac sign). But now, things are different, for now I look up for recipes… :-) Some years back I found this recipe of ‘Paushtik (Nutritious) Thalipeeth’ in Kalnirnay and have been occasionally making it since then, everytime I run out of my stock of Thalipeethachi Bhajni or even otherwise when mood demands. Here is the recipe – Paushtik Thalipeeth Ingredients – Bajri Flour – 1 cup Jowar Flour – 1 cup Chopped Onion – ½ cup Finely chopped Cabbage – ½ cup Grated Carrot – ¼ cup (In addition to these vegetables, you can also add grated beetroot and bottlegourd (dudhi / lauki)) Chopped Dill leaves – 2 tbsp (You can substitute this with any other leafy vegetable like Spinach (Palak) or Fenugreek (Methi) A handful of freshly chopped Coriander Red Chilly Powder - 1 teaspoon Turmeric Powder - 1/4 teaspoon Sesame Seeds (Teel) - 2 teaspoons Cumin Seeds (Jeera) - 1 teaspoon Carom Seeds (Ajwain / Ova) – ½ tsp Salt to taste Water as required to make the dough Oil for shallow frying Method - 1) In a mixing bowl add the chopped onion, cabbage, grated carrot, chopped dill leaves and coriander. Also add in the sesame seeds, cumin seeds, carom seeds, turmeric and red chilli powder and salt to taste. Mix well. Then add in the flours and mix again. 2) Add little by little water as required and knead to make a soft dough. If you are adding grated bottlegourd, be careful while adding the water, as bottlegourd has high water content. So be gentle while kneading the dough because the more hard you crush the vegetables, the more moisture they will leave. Towards the end of the kneading process, add little oil to make the dough soft and smooth. 3) Now, heat a tawa or a fry pan. While the tawa is being heated, divide the dough into equal parts and shape them into medium sized balls. 4) Take a polythene sheet and moisten it slightly with water. Place a ball of the dough on the centre of the sheet. Grease your fingers with oil and using your fingers spread it out in a circular shape. Make 2-3 holes in the thalipeeth using your finger. 5) Grease the hot tawa with oil and put the thalipeeth on it. Put some oil in the holes and on the edges of the thalipeeth. Cover with a lid and let it cook on low flame for a minute. Then uncover and flip the thalipeeth. Spread little more oil (half teaspoon approximately) cook till both sides are golden brown. 6) Serve hot with home-made white butter (Loni) (if you don’t have it, you can serve with Amul Butter also…), Curd (Dahi) and Garlic (Lasun) chutney or pickle of your choice.
