Peach Cake Muffins Ingredients: 1 cup gluten-free flour (if you dont need to eat gluten-free, substitute white whole wheat flour) 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 4 tablespoons unsalted butter 1/2 cup sugar 1 egg 1 teaspoon vanilla 1/2 cup soymilk 1-2 peaches, peeled and sliced coarse sugar (I use turbinado) Directions: Preheat oven to 400 degrees. In a small bowl, whisk together the first four ingredients (the dry) and set aside. With a mixer, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla. Add the dry mixture to the wet mixture, alternating with the soymilk, beginning and ending with the dry mixture, mixing just until combined in between each addition. Spoon the batter into prepared muffin tins. Top each with 2-3 slices of peach and sprinkle with coarse sugar. Bake for about 20 minutes or until muffins are lightly golden and a toothpick inserted in the center comes out clean. Cool completely on a wire rack
