Peach Cobbler - ½ cup firmly packed brown sugar - ½ cup water 1-teaspoon cornstarch - ¾ teaspoon ground cinnamon 3 ½ cups slice frozen peaches, thawed - 2-½ teaspoons margarine - 1 teaspoon lemon juice - ½ teaspoon vanilla extract - Vegetable cooking spray - 1-cup all-purpose flour - 1 ¼ teaspoons baking powder - ¼ teaspoon salt - ½ cup sugar - 2/3-cup skim milk - 3 tablespoons margarine, softened - 2-½ cups vanilla nonfat frozen yogurt Combine first 4 ingredients in a large saucepan, stirring well. Add peaches, stirring well. Cook over medium heat, stirring constantly, 6 to 8 minutes or until mixture is thickened and bubbly. Add 2 ½ teaspoons margarine, lemon juice, and vanilla: stir until margarine melts. Transfer to an 11-x-7-x 1 1/2 –inch baking dish coated with cooking spray. Set aside. Combine flour and next 3 ingredients in a bowl; stir well. Add milk and 3 tablespoons margarine; beat at medium speed of an electric mixer until smooth. Pour over peach mixture. Bake at 350 for 45 minutes or until lightly browned. Let stand 5 minutes. Spoon into individual serving bowls. Top each with ¼ cup yogurt. Service immediately. Yield: 10 serving.
