Peach Cobbler Jam INGREDIENTS: 4 cups (about 3 pounds) pitted, finely chopped (in food processor or blender) peaches* or 2 29-ounce cans drained and finely chopped peaches ¼ cup lemon juice 1 tsp. butter 1 box powdered fruit pectin 1½ tsp. cinnamon 5½ cups sugar DIRECTIONS: Combine peaches, lemon juice, butter, pectin and cinnamon in a large pan. Bring to a full boil and add sugar. Return to a boil and hard boil for 1½ minutes, stirring constantly. Skim off foam and pour into hot, sterile jars, filling to within 1/8 inch of tops. Wipe rims and cover with 2-piece lids. Invert 5 minutes; then turn upright. Makes 7 to 8 half-pint jars. *Peel if desired, but unpeeled peaches have more flavor. An easy short cut: Use thawed, frozen sliced peaches (2 16-ounce bags produce 4 cups).
