Pear or Peach Preserves 1 peck pears peeled and sliced thin 1/2 c. water 3 tbs. lemon juice 8 c. sugar Optional cinnamon, nutmeg to taste Using a large pan add water then sliced pears. Cook on med heat until almost done or transparent. Drain leave ½ c. juice with pears. Add sugar and lemon juice, spices and cook on low heat for 30 min. until syrup thickens. Ladle into hot pint jars wipe rims of jars then assemble two piece lids and set aside to seal. Peaches slice ¼ thickness using juice. Add sugar lemon juice cinnamon or nutmeg cook for 30 min. until syrup is thicken add to hot jars. Wipe rims of jars add lids screw tight set aside to seal.
