Pecan Pralines 12 oz bag pecans (toasted) 1 stick salted butter 1 can evap milk 1 can condensed milk 2 c white sugar 2 c d brown sugar tbs vanilla I use a digital food thermometer for my pralines. I havent messed up a batch in 5 years since switching from glass candy thermometer, to digital. Lay out parchment paper on counter top. In a heavy pot place butter, sugars and milks. Cook over a med-high heat, stirring constantly, until thermometer reaches 237 degrees. I use an electric stove, settings from 1-lowest through 10-highest. I cook on a 5 1/2. Takes about 25-30 minutes. Dont be in a hurry. Once it hits 237 degrees, pull from heat, add vanilla and pecans. I use a wooden spoon for pralines, I find it works best. You want mixture to be thin enough to spoon out onto parchment, but thick enough so that when they set, they wont be flat. Spooning onto parchment will be a fast process. Once on parchment, just walk away and let cool completely, and enjoy.
