Peppermint patties 1 cup dessicated or shredded coconut 1/3 cup raw cashews 1-2 tablespoons melted coconut oil 1-2 tablespoons melted honey 1/2 - 1 teaspoon peppermint oil (peppermint oil is more potent than peppermint extract so if you are using the oil start with a small amount and add more if needed. If you are using peppermint extract you may need more than 1 teaspoon. Just adjust to taste). pinch of sea salt dark chocolate (I used Whittakers 62% dark cacao) Blend all of the above until smooth (smooth-ish is fine too, gives a lovely chewy coconut macaroon texture). Roll mixture into balls then flatten them out slightly, put them into the freezer for 20-30 minutes so that they can firm up a bit. Melt chocolate and smother each patty in it. You can also make your own raw chocolate to coat them in (coconut oil, cacao powder, honey etc). Store in the fridge or freezer ♥ If you are not a peppermint fan try adding other flavour combinations; nut butters, vanilla, cacao powder, freeze dried fruit, rose or orange water, dried lavender flowers (only English lavender varieties, dried fruit....
