Peppers stuffed to perfection with the goodness of Italian Sausage! (Serves 3) Ingredients- 1 lb- Hot Italian Sausage 3 ea- Large Bell Peppers 1 cup- Cooked rice 1 tsp- Italian seasoning 1 tsp- Salt 1 Tbsp- Butter 1 tsp- Garlic (minced) ¼ cup- Tomatoes (diced) ¼ cup- Onions (diced) 1 cup- Pepper Jack cheese (shredded) Directions- 1. On a medium to high heat, brown off the garlic, onion and tomatoes in butter. Next add sausage(constantly stirring). While cooking, apply the seasonings. 2. Sausage should be cooked for 5-10 minutes. 3. Strain and cool down. 4. Preheat oven to 350 degrees. 5. Next add sausage to cooked rice and fold in cheese (save ¼ cup). 6. Cut the peppers long ways. Hollow out the peppers by remove the seeds. 7. Stuff the peppers with the sausage and rice mixture and top with extra cheese. Bake in the oven for 25 minutes. pinterest/hatfieldmeats/
