Perfect Recipe for Sunday Brunch: Cheesy Corn, Black Bean Salsa Frittata Submitted by Jennifer Johnson (MN) Ingredients 16 oz. shredded Cheddar cheese 16 oz. shredded Monterey Jackcheese 1 jar Corn, Black Bean Salsa (TS item) 6 beaten eggs Directions Combine first 2 ingredients, set aside. In another bowl combine Corn, Black Bean Salsa and eggs. Spread half the cheese mixture in a greased 9 x 13 baking dish. Pour salsa mixture on top of cheese mixture; top with remaining cheese. Bake at 350°, uncovered, for 30 minutes. Let stand 10 minutes. Serve warm, cut into small squares. Makes 8-10 servings.
