Perfect Sunday-ish pastime; rise, bake, put in apartment foyer. Yum! Quick bread recipe: 2 tsp yeast 2 tsp sugar 25mls warm water 500g strong flour 1 tsp salt 375mls water (approx) Oil Make a yeast mix with yeast, sugar and warm water. Leave for 5 minutes until it is foamy, like a milkshake. Put dry ingredients into a big bowl, make a well, add the yeast foam and water and mix with a knife, then one of your hands. It will be super sticky but dont worry. Keep stirring with your hand then turn out onto a floured surface. Knead against the bench (use the same already-sticky hand), not caring that it seems VERY STICKY - this is THE TRICK I learnt at a bread making course recently (New Zealand School of Food & Wine ) - desist from adding more flour! Work it baby! For at least 10 minutes. Then scrape it into an oiled bowl, rise in a warm place, until double in size (about 60 mins). Turn out, cut into small rolls (about 10-12), knead each ball and then set them out onto a tray for baking. Rise for 30-40 mins. Bake in preheated oven to 250 C until golden and hollow when tapped.
