Personal Question: What is your favorite BBQ? Traveling around the country for years I have eaten all types of BBQ. I love a lightly smoked brisket in Texas with a side of cowboy beans and grilled Texas toast. Kansas City has some very unique restaurants that serve burnt ends and fries cooked in lard. Low country Carolina chicken with the vinegar sauce can be wonderful too if done right. I would have to say my favorite is Memphis style BBQ -both the wet and dry rubbed baby back ribs and pulled pork. It is also my favorite BBQ to cook. If you are really going to enjoy Memphis style BBQ, you have to make ALL the fixins too! First you cleanse your palate with sharp cheddar cheese, smoked sausage, pickles and some really good saltine crackers. (LOL, but true!) Your meal can include other side dishes, but the following are a must: Jalapeno cornbread, mustard greens slow cooked with ham hocks, regular slaw and red slaw, baked beans, salty fries (not too crispy- just right) and iced tea. Okay, you can follow this meal with an expensive overpriced dessert you buy, but please keep it simple… sliced watermelon, and/or a warm cobbler cooked in an iron skillet with vanilla ice cream is fine.
