Pies! I am spending the day baking 6 different types of pie. Here are some of my favorites that are making it to the table tomorrow. Chocolate Cream Pie with Mile High Meringue This is my great-grandmothers recipe that has been passed down. Ive honestly never tasted a better one. The tricky part about this pie is that sometimes you have to make adjustments to the recipe if it doesnt thicken right or something like that. So not a novice pie. Chocolate Cream Pie Ingredients 5 Cups of Milk (sometimes 6) 2 1/2 cups Sugar 5 Tablespoons of flour plus one T. of Cornstarch pinch of salt 6 egg yolks, beaten (separate whites) 1 tsp vanilla 1/3 stick butter 2 pie crusts (cooked 10 minutes weighted down and another 10 minutes without the weights at 350 degrees) Mix all dry ingredients first in saucepan. Stir in eggs and butter and turn on heat to med temp. Slowly stir in milk and mix until smooth. Turn heat up until it bubbles and begins to thicken. It should turn out like a pudding consistency. Add vanilla at the very last. Pour into pie shells and let cool Mile-High Meringue (Works every time. My great aunts recipe) Ingredients 4 Egg Whites 1 T. corn starch 2 T. sugar 1/2 cup water 6 T Sugar Directions Heat cornstarch, sugar, and water in saucepan until it turns clear. Cool mixture. Beat egg whites in mixer until they peak Add mixture to egg whites until creamy and thick Add sugar at the end and keep mixer going until blended Meringue should be thick and stand up high on pie
