Pineapple and prawn salsa (Molho lambao com abacaxi) Ingredients ½ red onion, finely chopped ½ red pepper, finely chopped ½ green pepper, finely chopped 2 tomatoes, chopped 100g/3½oz fresh pineapple, diced 50g/1¾oz dried shrimp or 100g/3½oz fresh ones 1 garlic clove, crushed 1 medium red chilli, chopped 1 tsp oregano, chopped 1 tsp flatleaf parsley, chopped 1 tbsp honey 1 tbsp ketchup Salt and freshly ground black pepper 50ml/2fl oz white wine vinegar 125ml/ warm water Preparation method Mix all the ingredients together apart from the water, then pour the water over. Let stand until cold, then serve.
