Ping! The neighbor likes me to harvest his apples, and though they are blemished (he just lets them do their own thing) they make a fine applesauce. I cut up the apples and add just enough water to keep them from sticking to the pan, and then cook them until they are soft. Then I add sugar and cinnamon to taste--these needed precious little of either--whir them in the blender until smoothish, and process them in a water bath for 20 minutes. Ping! Ping! Ping!
