Plump fat grains vs skinny grains. The skinny ones are obviously more active, although I started the batch with small grains about 8 hours later, but this morning its brew is more yeasty and sourish taste than the earlier batch with fat grains. Note: the fat grains have been hibernating in the fridge for Probably a good 5-6 months with 3-4 times changing of sugar water only. I tried to revive them 2 days ago with sugar water, they did revive!
