Popcorn Brittle (Weight Watchers) Makes 16 servings By taking out the nuts, we can make a brittle that fits our lifestyle and is just as crunchy and delicious as the traditional version. The sugar is cooked to a very high temperature. Make sure kids and pets are not underfoot when youre making this treat. Ingredients Nonstick cooking spray 1 cup sugar 1/4 cup light corn syrup 1/4 cup water 2 Tbsp molasses 2 tsp unsalted butter 1 tsp vanilla extract 1/2 tsp salt 1/2 tsp baking soda 8 cups crushed air-popped popcorn Instructions 1. Spray a large baking sheet with nonstick spray and set it aside. 2. Combine the sugar, corn syrup, water and molasses in a heavy, large saucepan, and set over medium heat. Stir until the sugar dissolves, then clip a candy thermometer to the inside of the pan and, without stirring, bring the mixture to 280°F (soft crack). 3.Stir in the butter and vanilla, then the salt and baking soda. Be careful; the mixture will boil up. Immediately stir in the popcorn. Pour onto the prepared baking sheet and smooth to a thin layer. Cool on a wire rack for 1 hour, then break into chunks and store in an air-tight container at room temperature for up to five days. Serving size: 1 oz.
