Pot Roast 2 1/2 lbs. chuck or shoulder roast 3 potatoes, peeled & quartered 1 c. carrots, peeled & chunked... 1 large onion, sliced or quartered 1 medium baking apple, seeded & quartered 1/4 tsp. celery salt 1/8-1/4 tsp. black pepper garlic, ginger and basil paste, with mixed herbs. (add spices etc to taste) Preheat oven to 350 degrees. . Season meat on both sides with garlic, ginger and basil paste and mixed herbs; you can also make stabbing slits in the meat and put the mixture in the holes. You will notice a better result if you do this the night before and let rest in the fridge overnight. Spay the pan with olive oil. Place vegetables and apple into pan. Lay meat on top of the vegetables. Cover & bake 2 1/2 to 3 hrs. or until veggies are tender and meat is thoroughly cooked. Can be cooked in a slow cooker, Cover the bottom of your slow cooker with water place in slow cooker before going to work, set on Auto. Put vegetables on the bottom and sides. Serve with steamed greens, (from your garden)
