Potato Corn Soup To make: Melt 2 Tbsp butter in large pot over medium heat. Add 2 lb peeled, chopped potatoes and 1 chopped onion. Cook 8 minutes, stirring frequently, until tender. Add 1 32-oz carton chicken broth, 4 cups water and 2 Tbsp seasoning (Old Bay’s best if you have it). Bring to a boil. Reduce heat. Simmer until heated through, stirring occasionally. Remove from heat, cool 10 minutes. Purée half the soup in a blender. Return to pot. Add 1 16-oz package frozen corn. Simmer over medium heat until heated through, stirring often. Stir in 1 8-oz bag shredded cheese (or any cheese, chopped or grated) until melted. Serves 6 to 8.
