Prepare Eazy Eatz pie crust, roll dough into ball and pinch in half, press 1/2 into pie pan and set aside. Take two 6 ounce chicken breast, sprinkle with salt and pepper to taste; cook thoroughly then set aside to cool for dicing. Prepare a 10 ounce package of mixed vegetables according to instructions; set aside. Saute a 1/2 c. white onion and 1/2 c. mushroom in 1/4 c. butter until onion is transparent (not brown). Whisk 3 Tbsp Cornstarch into 3/4 c. cold milk. Pour 2 c. gf chicken stock into a stock pot, add mixed veggies, onion and mushrooms, and chicken to stock. Heat to boiling, add milk and cornstarch mix, bring back to boil, stir, turn down heat and simmer for about 15 minutes. Add 1/2 tsp salt, 1/2 tsp Thyme, and pepper to taste. Pour thickened mixture into pie crust and top with 1/2 the original pie dough. Bake at 450° for 15 minutes. Allow to cool and set for 5-10 minutes and serve! Voila!
