Preparing the New Leaven. Traditionally, on the Feast of the Elevation of the Cross, Greek Orthodox households prepare “new leaven” (“sourdough starter”) in an age old home ritual using the Blessed Basil sprigs they receive from the Priest in Church that morning. Greek cookbooks traditionally contained the instructions for this ritual, and I even have one in which they are translated into English. This leaven is used by the household to prepare the “prosforo” (“Bread of Offering”) used in the Eucharist. There are only two days on which this ritual can be done, today and the Sunday of the Cross in Mid-Lent.
