Prepped a colorful and nutrient-rich dinner with Anthony. Chopped celery, carrots, peppers, parsley and shallots stir-fried and mixed in with the organic quinoa. Steamed broccoli for sides. And of course, doing our family in Malaysia proud by attempting to make Malaysian lamb rendang curry for a delicious source of protein. Thanks to my beautiful cousin, Angeline, who sent us home with so many authentic Asian spices to experiment with! Who says healthy and balanced meals cant taste delicious?? ;)
