Preserving Olives: Make sure that the olives are ripe enough but not too ripe. Place olives in water for about 3 to 4 days and change water twice daily. When they change colour to look a bit muddy then they are ready to put into brine. Brine: 1 part salt to 10 parts water do not dissolve the salt in warm water but stir it in and keep on rotating clock wise. Place olives in brine and leave for months …to check if they are ready take one out and see if the stone comes off clean from the flesh.
