Press Officer Shares an American Christmas Tradition With an Azerbaijani Twist Gingerbread houses are a Christmas tradition for many American families. They are made of hard gingerbread cookies baked into the form of houses and held together by royal icing, which hardens when dry, and decorated with different types of candy. The gingerbread house can take many forms and competitions are even held for building fantastic structures out of sweets. When I was a child my Aunt and Uncle brought me a gingerbread house kit every year for Christmas. On Christmas morning we would build and decorate the gingerbread house together. When I got older, I decided to start designing my own gingerbread houses. As my houses have gotten more complicated it takes more time to make them – about a week in total to design, bake, and build them. Recently, I’ve tried to incorporate iconic architecture from the places I live abroad. In Russia I made a house based on St. Basil’s Cathedral, and another like a traditional Russian dacha. For my first Christmas in Azerbaijan, I was inspired by the Maiden tower, which posed a whole new challenge in terms of making a round structure. I enjoyed making it and look forward even more to eating it on Christmas morning.
