Pressure Cooker Pot Roast One 3 pound chuck roast 2 1/2 cups beef stock 1/2 cup water 3 medium sized yellow onions 2 cloves of garlic 2 tsp black pepper 1 tablespoon soy sauce Do not brown roast, instead rub with soy sauce. Place trivet into cooker and place roast into cooker. Chop onions and place them on top of roast Add pepper and garlic to broth. Pour broth mixture into cooker, over roast. Close lid and bring to pressure at high heat. Pressure cook at 15 lbs of pressure for 45 minutes. Let pressure reduce gradually. Remove roast and pour liquid into a de-fatting cup or skim off fat. Thicken broth with flour or corn starch. (Note: For those that arent used to making gravy, mix flour with cold water and stir vigorously. When mixed, pour into pot through a strainer, while whisking until thickened and the flour is sufficiently cooked.)
