Pretty Ringed Eggs You need: Red Bell Pepper Green Pepper Onion Eggs (Farm fresh if you can get them!) Slice the onion in to rings. You wont use all of it. You need them at least 1/4-1/2 inch thick to keep the egg from running out over the top. Do the same to your peppers. Try to cut as straight as you can. Pick the rings you like the best. Heat your egg pan (I used a cast iron skillet). Place your rings in the pan. Carefully crack open the eggs into the rings. Place a lid over the pan and cook to desired doneness. You dont really want to slip these but you can if you want, they just wont look as pretty. Putting a lid over the pan and letting them cook helps them cook both top and bottom. I cooked mine for about 3 minutes. When done, place on plate with your favorite fresh fruit, 100% whole grain bread (IF you arent avoiding carbs) and enjoy! This was my feeble attempt to make pretty eggs for breakfast. I am think I either am lousy at making pretty eggs OR the person who posted this on Pinterest went through 5 dozen eggs until they got it perfect. I stopped at 9 eggs!
