Pretty proud of this! Venison rack that I split of into rack and smaller loin to properly remove the silver. Rubbed with cinnamon, cumin, chili powder, garlic powder, ground coffee, and cocoa powder. Let sit for 2 hours then pan sear to get a nice little crust. Oven at 350 for about 20-25 min. Came out perfect, tender and amazingly flavourful! It was served with a mustard hollandaise and garlic-thyme mushrooms.
